It came out well for a complete winging-it attempt. It was oddly reminiscent of the stuffing for dolma, the greek rolls wrapped in grape leaves? Anyway, it was definitely edible. Not as much flavor as I like - the seasonings were bland. Next time I'll season the meat much more heavily, so that the finished dish ends up with more flavor. I also ended up adding another cup or so of water near the end because the brown rice was still too chewy for my tastes. I would definitely try it again.
I can't eat tomato, but this is a dish that would do well with a can of diced tomatoes added for part of the liquid. Or any other flavorful liquid. Brown rice is sort of like a flavor vacuum. You have to add a lot in before any comes out. :)
