White Chocolate Raspberry Cheesecake...

Remove the filling from 20 Oreo cookies and crush to crumb


Mix crumbs with 1/3 cup butter and press into a 9 inch spring form pan lined with parchment paper


Wrap pan in foil and place in freezer


Combine 1/2 cup of raspberry preserves with 1/4 cup of water and bring to a boil


Strain to discard seeds, and let preserves cool and place in refrigerator


Combine 32 ounces cream cheese, 1 1/4 cups granulated sugar, 1/2 cup sour cream and 2 teaspoons vanilla
in mixer and blend until smooth and creamy


Whisk 5 eggs together and add to mix




Sprinkle 4 ounces of white chocolate chips into bottom of crust


Pour half of filling into pan over crust


Drizzle raspberry preserves over filling




Pour the rest of the filling into the pan


Place into bath of preheated oven at 475 degrees for 12 minutes and reduce to 350 degrees for 1 hour more


Remove from oven and let cool completely. Refrigerate at least 4 hours or over night


Garnish with shaved white chocolate
