And yeah, I know what you mean; it's not one i would have picked up either if I'd just heard about the plot. What I'd recommend, if you're curious about the show (and since you don't mind spoilers or starting late into established series) is to begin with late-first-season/early-second-season, watch from there, and decide if you like that. I could give episode numbers (would have to look them up).
I must note, a lot of stuff has been building ever since the first few episodes; the plot-stuff that I was squeeing about yesterday was stuff that had ties back to episodes five and six.
But yeah! Just looked things up, and for you I would probably recommend starting around Episode 20. That one's an exciting episode, and is right before the lead-in to the first season final. I think there's a bit of exposition in there as well, so you can pick up the basics if necessary.
But yeah! You can watch or not watch at your leisure, but I recommend it simply because I find the series so awesome. :D
