I'm rather partial to Chopin's Piano Concerto in E Minor Op. 11, the Romance: Larghetto movement:

I was classically trained but ironically the first time I ever heard this piece was in the 1980s movie Splash. Go figure!

I was thinking Chopin as well, though I have always been partial to The Raindrop Prelude, as over-played (and mis-named!) as it may be. However I can never find a version I like as much as the way I play it, hahah!

I've also always liked the Romanze from Brahms' 6 Klavierstuecke (Op. 118, no. 5) as well.

Also, this doesn't exactly count, but this Saint-Saens movement 'Aquarium' from Carnival of the Animals is breathtakingly lovely.

My new favorite is Lowell Liebermann's Nocturne No. 2. Starts and ends so simply, with a bit of craziness in the middle...

My old favorite (I can't have just one favorite!) is Rachmaninov's Prelude in B minor, Op.32 No.10. Which... also starts and ends simply with craziness in the middle, now that I think about it. Apparently I have a type!
