I know this might sound dumb as even the doctors aren't sure what the trouble is, but have you checked Web MD? Maybe you could get some idea of the problem if you visit that site.
I got the same thing! Don't always depend on doctors. I had chickenpox years ago and the doctors were baffled as to what it was at the ER. They took samples and their test results came back days later. When I got home I went to my family doctor and he took one look at me and said, "You've got chickenpox!" So some doctors are not always up with things. Research might turn up some things for you and your mom. Good luck! *hugs*
I WORKED WITH A WOMAN WHO HAD SOME FORM OF RHEUMATOID ARTHRITIS (SORRY ABOUT THE SPELLING) WHO WAS ALWAYS IN PAIN ESPECIALLY HER JOINTS, AND SHE RECEIVED 'INFUSION' THERAPY EVERY SIX TO EIGHT WEEKS TO ALLEVIATE THE PAIN AND TO SLOW THE ARTHRITIS PROGRESS. SHE ALWAYS TOOK A DAY OFF WORK FOR THE INFUSION INJECTIONS AS IT TOOK SEVERAL HOURS AND SHE TRIED TO GET IT DONE ON FRIDAYS SO SHE COULD REST OVER THE WEEKENDS.

Has your Mom been checked for bone cancer? I know that sounds scary, but her not being able to stand being touched makes me think scary stuff.

I don't think it's rheumatoid arthritis though. I don't think they've considered bone cancer. I don't know. We still think there's a connection to the accident she had seven years ago. She still has a plate in her pelvis. I don't think the bone's ever really healed.
The MRI was to see what was causing the swelling - see if there was any fluid there.

What were they looking for in the MRI?
