Columbus Day dinner?

What kind of meal is appropriate for Columbus Day? There's always Thanksgiving type food, since Canadian Thanksgiving if the same day. But I'm thinking about Indian food (as in from India) in honor of the Great Explorer who found the wrong continent and didn't know it

I found a recipe for chicken and mushroom curry. It took a while, but it was delicious! And I've got leftovers which should be even better tonight. :)
