Since Grimmauld Place is protected by a Fidelius charm and is also Unplottable, would the Trace from an underage witch or wizard performing magic be detected?

And if it were, would the Ministry know who it was and where it happened?

I'm working on a story where this situation is likely to be a factor.

No, I've read some good fanfiction's where this issue has come up, & This is usually how they deal with it:

1.) the trace only works for non-magical houses ex: the weasley twins use magic all the time, but since they live in a magical house, the ministry chalks it up to the parents
2.) this is b/c the trace doesn't track specific wands, just magic done in the area

So in theory if you wanted to do a story where magic takes place in Grimmauld, you could if you followed that logic.

The Trace detects magic but can't tell who has performed it. For example, Harry received a letter from the Ministry when Dobby performed magic at the Dursley's. With all the magic already happening at Grimmauld place, I think underage witches and wizards would be safe, at least from the Ministry. Their parents may be a different story . . . ;)

I'll just echo the comments above: it wouldn't matter because Grimmauld is considered a magical household.

Alright, I'm going to throw a monkey wrench in this and say refer to OoTP - It's been years since I read it, but I think I remember when they were cleaning up, I don't belive the kids were allowed to use magic as Molly did. But if you're worried about Canon-pickers, go to that section of OoTP and see how it was handled.
