Next question: anybody know how friendly Starz is with putting episodes of their shows online (or making them available for ~$3 a pop through iTunes or something) close to when they air? Because I'm positive I can't afford cable

No idea. Starz has rarely had any series that might go that way. You might check the availability of Spartacus: Blood and Sand as something of a precedent for how Staz may act (BtVS's and AtS's Stephen DeKnight is headwriter/producer of that one, and it's been Starz most successful program to date).

If you download, you might check the LJ group "TV_Share" they post all sorts of episodes for download.
