I served these with roast chicken, cold pasta in pesto and hot hot parmesan rolls straight from the oven! AMAZING!! Though in this recipe you are suppose to serve these tomatoes as a cold salad.. but my mom is not so much for COLD food.. so I put them in the oven for a few minutes after I had removed the chicken for carving!
