But it doesn't have to be blackmail. Just say that £250 doesn't really cover the time and effort required in sending a cheque - your time is more valuable than that.

They know it'll cost them a lot more in legal fees and time if they were to take you to court for it, hence them offering you £250 in the first place. Hold out for more, and bag the interest in the meantime.

I'd suggest you might be 'on holiday' for the next few weeks, and are therefore unable to respond to their request for a while :)
