(see above). It was good, but not OMG-I-Must-Make-This-For-Everyone-I-Know good . . . you know what I mean? I like a nice dense apple cake better . . . would like to try this recipe with plums and a brandy sauce maybe next time, though. I think those two variations might give it a little more pep.

Did you use old bread?

It's actually a recipe to 'recycle' old and stale bread. It also is a good way to use old wrinkly storage apples.

I had a 275 g box of Japanese panko breadcrumbs on the shelf, so I used that. The foil pouch was sealed, but it was past its due date.

The panko breadcrumbs are often of surprisingly good quality; they don't have that sweet taste that a lot of North American bread has, you know?
