I've only tried to make jam once ... I had visions of pink fleshed dragon fruit which I got home, and cut open to find that they were the more common white fleshed variety. The resulting jam looked like frog eggs. NOT pretty.

I DID can 3 jars of mixed citrus curd once, poorly, but the one I didn't gave away or eat right away lasted almost a year.

Foe sure! I've never even *eaten* a quince; what would the jelly be like?

Impressive about your curd lasting almost a year; I'm so careful about processing stuff to give to others that I didn't want to chance a potential botulism outbreak with an egg-based curd...hence the pineapple jam. All of the jams I made were taken...except the pineapple one, sadly. I still have about 5 left of those; I guess my guests weren't sure if they would like it or not!

Quince is great ... texturally resembles a pear with the added taste of apple. I've poached it and served with French vanilla ice cream ( ... )
