Seeing as I would die from one bite, no, I won't be eating it. For once I'm happy to be allergic to chicken. Interesting concept, but lost on me.

Sometimes. Like when my roommate in college would order some wings that smelled divine or when I see a huge turkey leg at a renaissance fair (yes, I'm allergic to all poultry).

But then I forget to check a label on some salisbury steak TV dinner and ingest some chicken broth and realize I'd rather be alive and not eat chicken.

That's really vile! I wish I could be more interesting, but that's my immediate reaction. Just... disgusting.

Who's that supposed to appeal to, anyway? Not-bread people? Because surely anybody who's watching carbs, or whatever, well... aren't there plenty of those things (carbs, or whatever) in the chicken breading, and all?

Hmm you're right. There is a bit of bread here, just not in the traditional sense. I think this appeals to the people that order those bowls full of 96 meals or whatever.
