I've worked in such a place.
Typically, I go to the women's if it's unoccupied...and clean. However, on occasion, I have used the men's room when nature dictated that as the best course of action. At an event with a line for the single stall ladies room and no line for the men's, I do not hesitate to go to then men's room.
NOTE: This level of coolness is a product of age. In my 20's I just did the pee-pee dance with all the other women.
