That recipe is really close to the recipe I use, except mine is one egg and no vanilla extract. Still yummy delicious though and they do stay soft. Brian LOVES when I bake them, and will fight anyone who wants him to share. It's like a possessive cookie rage or something, lol.
I've never tried rolling the dough and freezing it though, maybe next time I will try that :)
Also, that first pic is horrendous. Kudos to you for cleaning that up!
Oh, and I think Cookie Monster wants some of your baked goods >.> lol
