The minimum number of base stats that would make a system acceptable to me, given the constraints you gave in your post, is 3. Body, Mind, Social. I do however feel that how narrow you make your skills influences this, also whether you include a perk system. The broader the skills you have, the narrower your base stats need to be, and the broader your base stats are, the narrower your skills need to be.

This is to make it possible to have granular and unique characters systematically. If you don't care about that, requirements for narrowness of skills and/or stats drops.

I have never LARPed, so I can't say about that, but I don't feel that whether a game is play-by-post or tabletop changes this.

I don't feel that the genre matters for this base minimum, but different genres would of course require different skills. I don't feel that low combat / high combat changes it either, as per your constraints you still need several kinds of player/player ad player/other conflict.
