To be honest, I wasn't surprised because Paul has what I would generously call a very stereotypically British palate. For someone who is a professional in the food world, he doesn't seem to expose himself to a lot of non-European food or current food trends. I still remember the first time someone on GBBO used yuzu and the judges were like "What is this strange new fruit that I've never heard of?" despite the fact that it had been super trendy in western food for several years (in addition to it being a staple in Asian cuisine for ages).
I'll just put this all in spoilers, but I'm just discussing results of this week:
[Spoiler (click to open)]I'm so happy for Dylan. He's seemed a bit intense and stoic previously so I loved seeing him get so much praise and relaxing and smiling. I can't believe he's only 20 and producing such complex flavors.
I also loved seeing Nelly do so well. She's been a bit self deprecating but she obviously killed it this week. I would have been just as happy if she got star baker.
God the signatures all looked delicious. This is one of those times I wish I could go out and finding anything like that near me but they were all way too inventive to be commercially available.
I agree about Dylan. It seemed like he was finally able to relax a little bit. I know being in the tent is stressful but I want these bakers to enjoy their time in the tent!
I might have to get a maple bacon donut this weekend in honor of his showstopper!
