They can't, really - fertility declines in men at the same age as women. The cut off is less sharp in men (no menopause, though impotency is common), but the rate of success and the likelihood of a healthy baby (even with a younger mom) go drastically down. It is honestly reckless and negligent for much older men to try to have a baby because birth defects go sharply up and they will end up unable to raise those children to adulthood. Men need to realize they have a biological clock too and need to get on the same timeline as women.

Also note: we really don't know how many of these crusty old men with "late in life" babies are really the fathers. I suspect a not insignificant portion of them are not.

my great grandma (who had zero filter lol bless her) would occasionally go on rants about babies born with issues because of "old sperm" vs any pre-existing family health conditions lmfao

People change their minds as their lives change. She could have realized she didn't want more kids just as Joe here decided in his late 40s he was ready and old enough to be a daddy.
