I rally enjoy it when people who made fatal errors in their season redeem themselves in the Holiday bakeoffs, and when people who don't do too hot in the beginning come back strong.

Same! And I’ll add to that list: I love when the bakers make a pretty noticeable mistake and just shrug it off (like Jürgen accidentally not preheating his oven). There’s nothing to do but keep going! I appreciate when they can keep their cool (mostly because I would probably be the one crying in the corner at the first minor mistake).
