Wtf. I’m no lawyer, and I’m no judge, but it feels like paying for the hotel etc is going to go against him in terms of “we did nothing wrong”.

Idk if paying for the hotel will matter to a judge but he's still wrong for not following court procedure. If she is in fact a tenant, he needed to file an eviction and give her notice. If she's not a tenant (i.e. there was no verbal or written agreement and she never paid anything toward the home, not even a utility or cable bill) then he should've filed an unlawful detainer. That's what's used to remove an unwanted house guest or former romantic partner, etc.
