It's not super random. Daniel is a huge Comedy Bang Bang fan and Weird Al was the bandleader when it was a TV show so they have that connection. Scott Aukerman and a lot of the "regulars" from the show are in the movie.
You probably know this but was also based on a fake trailer from funny or die that I imagine people on comedy bang bang made. Based on the comedy podcasts I listen to, it feels like everyone in the LA and New York alt comedy scene knows each other and there was a pipeline of unpaid labor at UCB to internships and jobs at college humor/funny or die/ adult swim. And now all of those people have podcasts

I disagree. If anyone was gonna play Weird Al, it to be Daniel. Daniel’s in the unique spot where he got his HP money, and now does what he wants without having to worry. He’s really good in Miracle Workers, and if you haven’t seen it, it’s worth a watch.
It's hard to just choose one. I think my favorite is Eat It, but I also like the parody of Avril's Complicated. Something about the lyrics "Why'd I have to go and get myself decapitated? This really is a major inconvenience, oh man, I really hate it" just makes me lose it.
