I watched the first three eps and it was surprisingly good. I liked the the theme of lose of magic and thought Keven Smith did better than I expected.

If I've just seen one episode of the original on VHS (as I was fast-forwarding to the She-Ra episode after it), will I understand and enjoy this sequel? Does it work as a stand-alone?

I think it does an ok job in the first episode of giving a basic rundown of what the series is.
