The chef trick to make LOTS of poached eggs is to use a tall stockpot and when the eggs float to the surface they're ready to eat.

that would work....
I do have several large stock pots.... a tall 12 qt, even better might be slightly squatter 13 qt one, still tall, but with more surface area
