So I decided to go to Whole Foods to pick up some gluten free bread. I thought about making my own cornbread, but decided that making a wheat-free friendly pumpkin pie was enough baking for one day. While there, I saw something that made me cry for joy--gluten free bread cubes for stuffing. Sure it was overpriced, but, damnit, I wanted stuffing

And I bet it *is* as good as you think it is. Gluten free bread may not always be a good consistency to enjoy a sammich, but add all that other stuff to it and it's pretty much the same...IMO.
