This is weird: this study found a correlation between "vegetable-rich" food consumption and obesity in Chinese adults, and blames it on "generous use of oil for stir-frying the vegetables". The main culprit is probably economic growth in China, which has reduced hard labor for many and replaced it with more calorie efficient labor done sitting down assembling goods. I would like a study that correlates obesity with GDP growth.
