I'd stay away from olive oil, but that's me. If you do use it, a very little will do. I'm sure other people will come along with tips for it, but oil is very hard to get out of your hair if you're not using shampoo.
My scalp was dry to the point of flaking/peeling when I started, and I found that a 1:1 white vinegar rinse (that is, equal parts white vinegar and water) before I washed did wonders. If I find I'm starting to get a little flaky I just toss in a rinse and the flakes disappear like freaking magic. It's awesome. ETA: Make sure you aim at the scalp and not the whole head. If you have certain patches of dryness you might want to pay special attention to those. I just went to the dollar store and got a bunch of squirt bottles; I have one each for my baking soda and vinegar mixes, and one for the white vinegar rinse. You find you don't need much at all if you're aiming it at the right place.
