If I'm not sweaty or dirty, I don't shower every day. However, atm, I'm using the baking soda and vinegar mixes every five days, so, on the in-between days, I just myself a scalp massage. I also remove the shower head from the holder, hold it close to my scalp, and use warm water to, hopefully, rinse the dirt and oil out of my hair a bit. I also finish with a blast of cooler water. It seems to work for me.
Awh yeah. I tried the BS thing and it didn't really work out for me. My hair just felt really yucky afterwards...I'm thinking that the fact that my water here is so hard it might be interfering with it.
Uh, I shower daily. I wet my hair twice a week--once for a wash, once for a WO/acid rinse.
Let me ask you a question: how long is your hair, how thick are the individual strands, is it curly, and how thick is the overall volume? I find that the longer my hair, the longer I can go without washes. When I had a pixie cut, I washed daily, because otherwise it would stand up like a mohawk after I slept on it. (It never occurred to me that I could just wet it and get the same effect.) The longer it is, the better it is when I wash it infrequently.
Curliness and thickness combine well with less frequent washing. Thinness and straightness, less so.
My hair is a little past shoulder length at the longest layers, and the shortest go a little past chin length. It's a brown/auburn color...not dyed at all, and is sort of thick. It's been going through major changes since I've just had my second baby and it's recovering from all the postpartum hair loss. It's a little wavy... I call it "wannabe curly" just because it gets all the frizz in humidity and all that. The strands themselves don't seem really thick...just medium.
And my roots get really oily, whereas my ends always seem dry and poofy.
I don't shower everyday, just when I feel like I need it. I'd take the shampoo out of the bathroom if you have a problem with wanting to shampoo your hair. I feel that just rinsing my hair makes it feel "clean and fresh" too. I find dirty hair better to style because it holds better also, I find that a quick brush or styling spray helps my bedhead. I say you can still shower everyday and rinse your hair, you just don't have to wash your hair when you shower.
Yeah, that's probably because even just water alone rinses away sebum, especially if it's warm water. If one is trying to spread out time between washes, doing daily WO washes is probably not the way to get there.
Oh, OP--I realize I didn't answer your other question, "how to get there." I put my hair up when I shower, and it's not at all hard to keep it dry because I am taller than the shower head. If you have trouble, then a shower cap might be the way to go.
The bedhead problem ceased to be a problem for me when my hair got longer. I now braid it to sleep in, and when I wake up, I undo the braid and it looks decent enough to wear down if I felt like it (although I rarely do). If you don't like braid waves, you could, I suppose, mist some water into your hair and blow-dry it, or bun it to get bun waves. Bedhead in general is only a problem for shorter (shoulder length or less) hair, I think.
Lately I've been shampooing with some diluted Aurbrey Organics Rosa mosqueta shampoo every other day, followed with an ACV rinse. On the in between days I do WO or a cowash with either Giovanni conditioner or Aubrey's protein conditioner. I tried to go three days without shampooing today, but I just couldn't. My hair seemed oily, and I even tried the baby powder cornstarch thing today. I Really wanted to try not showering at all today either, but I caved.
I know even getting your hair wet everyday can weaken it, and I want to get away from it but argh! It's hard to do. :(
i had the waking-up-to-bad-hair problem before i heard about pineappling. here's how: if your hair is long enough to put in a ponytail, do so before you go to bed. use a soft scrunchie so that it will not make a dent in your hair, and put the ponytail very high (the crown of your hair is best). make sure your hair is dry when you do this. that's called pineappling, and in the morning you should be able to just let it down and maybe wet it a little to get it to look nice on the 2nd day.

I just hate how my hair looks in the morning where my bangs seem flat ironed to my face. It looks horrible.
