soup recipe?

I'm thinking about making a big pot of soup tomorrow, when it's brutally cold and we don't go anywhere.

I was thinking something with sweet potato.

Does anyone have any favourite recipes they'd care to share? Thanks in advance!

Steph posted a really good one a little while back, and I make it all the time. Really easy to make...the hardest part is peeling, cutting and mashing the potatoes. Your daughter actually helped me make it the last time she was over here (well, until she and Lauren got bored and left me with the rest of the chopping).

I made a Word document of it, so I'll email that to you instead of posting here, since it's probably easier.

OK, I totally lied...apparently I didn't make a word document of it, but cut and pasted from Steph's LJ to a Word document, printed and put it in my recipe binder, and then deleted without saving. *smacks head*

But I did go back in her LJ to find it again, and I've copied it so I can paste it here...I'm sure Steph won't mind. I usually make it without the celery b/c although Lauren is a great eater, she's not a big celery fan.

I love that recipe.... I actually made it again this week and added about 1 cup of mixed frozen peas/carrots.

I also put a bit of some cajun spice I have here.

Mmmm sounds good. I've got meatballs in the crockpot now, hope whatever yuo choose ends up working out and tasting good. It is sooo freezing today!

a cool FYI: Costco now sells sweet potatoe cut up into "fries". If I try out Steph's recipe with them, I'll let you know how it turns out.
