I love that the only brown guy on the men's Olympic gymnastics team was referred to as "The team's spiritual leader" by one of the commentators.  Love it.

There has GOT to be a way to make vegan ice cream.  Or vegan burfi (yes, I choose to spell it with a "u," not an "a" for obvious reasons).  Maybe with hemp milk?  Coconut milk?  Anyone?  SIGH.

Vegan Ice Cream

Synchronicity! I just this evening picked up a couple back issues of Vegetarian Times magazine at the library and one of them has an article on vegan ice cream (June 2008). There's a Peanut Butter Coconut (coconut milk, maple syrup, PB, soy creamer), Strawberry (strawberries, silken tofu, soy creamer, maple syrup or agave, jam), and chocolate (soy creamer, cocoa, cornstarch, sugar, vegan choc chips). If you would like me to transcribe one of the recipes I can email it -- I bet there's a lot available in various vegan cooking blogs too. My friend recently made a silken tofu-based ice-cream with maple and agave sweetening and peanut butter that was really good. Especially topped with carmelized apples!

Mmmm, the chocolate one, please. Soy creamer, cocoa, cornstarch, sugar, vegan choc. chips . . . I can do that! I might sub the soy creamer with hemp milk, and the sugar with agave, but we can do eeet!

Today, I did a vegan key lime pie filling that was pretty good, but too thick. Next time, less of the . . . er, thick stuff.

And carmelized apples *sa-woon*.

My partner gets a brand of ice cream made from rice milk. Rice Dream, maybe? I'm not sure how good it is, or what kind of additives and preservatives it might have in it, though.

We also have a book called Vice Cream. It has some non-dairy ice cream recipes that are delicious.

Rice dream has never really gone over well with me. It lacks . . . something -- that certain je ne sais quoi. I will definitely look up Vice Cream, though! Thanks!

I found this recipe from The Post Punk Kitchen (www.theppk.com). I haven't tried it, but their recipes are usually really yummy
