Orange ruffie is my mother's absolute favorite fish. It's so good!

I have several crockpot recipes I'd more than highly recommend. If I remember I will scan them and email them to you this weekend. I don't have them typed up. Some are mine/my husband's, but some are time-tested recipes from my MIL, who cooks only slightly healthier than her mother did when they lived on the farm in VT growing up. :D Off the top of my head, they include:
-chili con carne
-chicken and biscuits
-basic pot roast

We made chicken and biscuits tonight and it reminded me of you! I have earmarked all of the recipes, but alas this computer I'm now using (post job) needs to have full Adobe installed before I can PDF them. It might take me a week or so, but I'll get them all scanned in for you or I'll go ahead and type them up one night at a time! I haven't forgotten. :)

Nice to meet you! The recipe is below - I'm having it tonight!

SWEET AND SOUR CHICKEN

1.5 cups slived carrots
1 large green pepper, chopped
1 medium onion, chopped
2.5-3 lb. chicken, cut into serving-size pieces
8-oz. can pineapple chunks in juice
1/3 cup brown sugar
1/3 cup vinegar
1 Tbsp. soy sauce
1/2 tsp. garlic powder
1/4 tsp. ground ginger
1 tsp. salt

1. Place vegetables in bottom of slow cooker. Add chicken.
2. In separate bowl, combine pineapple, brown sugar, vinegar, soy sauce, bouillon, garlic powder, ginger, and salt. Pour over chicken.
3. Cover. Cook on Low 8-10 hours.
4. Serve over cooked rice.

It's a crock pot. They are really nice, especially for students. The only thing is you have to plan ahead.

And you can cheat on the recipe. I use pre-peeled baby carrots, frozen skinless-boneless chicken, and frozen chopped green peppers and onions from Kroger a lot of the time.
