Yes, I did just spend three days making a pot roast. AND IT WAS WORTH IT!

That looks tasty, but wow, long! It does remind me that I should put mushrooms in my with my pot roast, though.

There's very little actual hands-on until the end, though. It's more "dump some stuff in pot; come back in several hours."

Technically, it could be done in 2 days, if you simmer the sauce in the morning and then roast in the afternoon.
