there are two in downtown kitchener. one is an all you can eat, the other is a standard one. both are quite good. mr sushi by the second cup is also good. for a bit more cash you can go to sakura island on university and king.
Niko Niko (downtown Kitchener, on the block kitty-corner to the Walper Terrace) is both yummy and reasonably priced. Closer to your neighbourhood is Ye's Suishi (King and Northfield, I believe, up by your work), which is reputedly fabulous and all-you-can-eat, though I've not yet had the chance to try it myself. (I'm pretty sure Jonathan's been there, if you want a first hand recommendation between the two :))
You are right, both are good. niko niko has, unfortunately, lousy service but it is fantastic sushi. Ye's isn't as high quality but the variety is wonderful
When I lived in rez we used to go to Mr. Sushi all the time (it's in the plaza next to sugar mountain). They have a sort of help yourself approach, but they're ridiculously cheap. When I first started going, you could help yourself from the collection of already made sushi (it gets snapped up so fast it's always fresh) and then they just left the till open and you could put your money in and take any change you needed. :D
