Bagels

Here's a bagel recipe that I baked today - it's an all natural recipe (no MSG, no high fructose corn syrup and NO hydrogenated oils!!)

4 cups all purpose flour
1 Tbsp sugar
1 1/2 tsp salt
1 Tbsp olive oil
2 tsp dry yeast
1 1/2 cups of warm water

I've never made bagels before. They sound great! I wonder if they would work with my rice flour....I've found baking very hard using the rice flour.

you can't substitute straight rice flour for regular wheat flour, or you'll end up with a overly dense, crumbly mess. Gluten-free baking requires a blend of flours, either blended yourself in a recipe or by buying a commercially prepared blend such as by Bob's Red Mill. The folks over on celiac can help you out.

The flour I have, I thought had the mixing done for me. However, the couple of times I've tried making bread, its become very dense and dry. It wasn't really like bread. Thanks for the group, I'm gonna go check it out.

An easier way to form bagels, if you're interested, is to divide the dough into balls and then just stick a finger through the middle and stretch it out a bit. That way there won't be a problem with the ends coming unstuck! :)

why thank you! :) my problem was more with them looking a bit skinny (no room for any toppings lol) rather than the ends coming undone. I will try using just the finger next time, it sounds a lot faster, too!
