I want to make mead

So we finally opened a bottle of mead I got from False Isle when I was up there training the exchequer.  It's the best tasting alcoholic drink I have ever had.  I wish I knew more about the process to have asked good questions - like what type of yeast, honey to water ratio?  We have a couple of books due to our cider experiments, but the recipes

I used a very simple mead recipe from the "Winemakers Recipe Handbook Book" a small purple book of wine recipes available at most wine equipment shops.

It turned out remarkably well. It also had a lot of alternative recipes for other fruit etc.

Glynis and I are both teaching at the University, and taking a class or two.
