Ha ha, I know the feeling! I'll have Ziplocs of bread both in the fridge and the freezer. Sometimes I just get in a baking mood, you know? It helps that my mother and sister both love my bread - Mom likes the White Mountain and my sister's family eat the cafeteria rolls up - so I can always offload any spares I find lying around. :)
Do try making focaccia. It's by far the easiest bread recipe I've made, it doesn't require any weird ingredients, and it's so tasty!

At first I had no clue how to pronounce it, as I'd only ever encountered the word in print. Thank goodness for online dictionaries with sound files to teach pronunciation.

I followed a focaccia recipe, and it matched the focaccia the sandwich came on. I'm not familiar with sourdough bread, so I couldn't say whether it was anything like that.
The recipes I've seen for focaccia and cibatta look pretty close.
