Milo is taking ice skating lessons, so we are doing Family Skate nearly every weekend. Fun family time and *adorable* 3-year-old slipping around on skates. They give them orange caution cones to use like walkers on the ice -- freaking hilarious to watch a rink full of small people with orange cones sliding in front of them.
Have discovered brussels sprouts roasted with olive oil, salt and pepper, then finished with a balsamic glaze. Also coconut milk poached mahi mahi with baby bok choy. NOM. They secret is the tiny thai chili sliced into the broth at the beginning of poaching - adds the perfect amount of heat. Recipe upon request.

15 oz can coconut milk
Thai green chili
1 TBS sugar
1 lb skinless boneless mahi mahi or other firm white fish (pollack worked well)
1 tsp salt
1-2 heads baby bok choy
Zest lime and reserve. Juice lime into skillet. Over medium heat combine like juice, coconut milk, thinly sliced chile and sugar.
Cut fish into 6-8 portions, rinse and pat dry. Rub salt on fish then place in hot skillet.
Cook fish, covered x 5 mins. Stir in torn bok choy. Cook 3-5 mins more until fish flakes easily.
Garnish with lime zest.
We make bean thread noodles and serve in bowls over noodles.
