Yep! I love it, too! And I discovered that it can be diced and frozen for easy use later! That's what I used for this.

I don't like celery, but oddly enough, I really like celery rood/celeriac/whatever you prefer to call it.

The only hard part is cleaning out all the dirt.

Bah, I just peel all that stuff off, myself.

It tastes kinda like celery but also parsley, and isn't starchy like most root veggies.

Maybe it's the texture of celery you dislike more? I'm thinking, and possibly celery is more bitter. There's a bite to it that celeriac doesn't have.

Y'know, I'm technically not, but I've been tending that way more and more, and *just this morning* I mentioned this to L. Decided to stop the "must make turkey almost every Friday night" thing because it's just getting less and less appealing. Gonna see how going veggie feels. Might still eat fish or poultry in restaurants, but gonna stop buying flesh to cook at home.
