Recipe - soy burger noodle casserole

Something I'm trying... I'd like to get the beef out of it at some point, but I have a freezer full of beef to eat. :) I'm down to one or two meals of meat per week, which is good for us. It used to be pretty much every night and lunches too!

Hey, got a question for you.. one of the wives in Mike's Star Wars group has recently been diagnosed as gluten intolerant (I suspect Celiacs) I was wondering if it were ok to introduce you two via email for recipe exchange and etc?
