My brother makes an awesome cassoulet with cheap ingredients, so while he was in London at the weekend I oppressed him into making this. (actually, he volunteered). In order to remember how to make this, and to absolve myself from any kind of 'helping' responsibilities I took photos at every step of the process and put them on Flickr -

aw, srsly though, half a bag of dried cannelini beans, soaked overnight, isn't *that* much more than two tins of baked beans and would be so much nicer, honest. also belly pork is k-super cheap. also herbs?

sorry i am a bit of a cassoulet rockist...

Oh, we totally messed up on the herbs! Nicky asked about them and I said yes, we have loads, and then we both ended up forgetting that step. Super-cheap belly pork, though, YES PLS, and would tinned cannelini beans be an acceptable compromise? :)

It's brilliant. Yes, as I said in the intro on Flickr and to carsmilesteve above, despite my heated defence of the baked beans (and they really were good!) I think they could be modified out of the mix quite easily.
