Great post! I would also add that looking at recipes can give you ideas about what kinds of tastes might go together. Learning different ethnic cuisines can inspire -- kalamata olives, tomatoes, capers or soy, ginger, wasabi, etc

And I love cooking with friends. We'd often inspire each other and push on to new taste delights!

So, what's the story of you as a chef? That's what they're buying. You've got a great story (actually, many of them.) You can cool multiple traditions, for multiple audiences, ranging from Hawaiian to Creole to Motorcycle. Which one are you gonna market?
