I just made the best kimchi fried rice with tempeh (omnivorous tempeh-lover here) instead of the meat the recipe called for and homemade kimchi. The house reeks now, but it was so worth it.

I'm glad you left out the spam. lol. Did you make the Kimchi or does it come in a jar. This sounds like a dish made from left overs. Like bubble and squeak.

The kimchi was from a batch I made about three weeks ago. Fermented it for a few days at room temperature, and then put it in the fridge.
