100 Things 003: Fridge Cake

Want an expensive luxury dessert but don't want to spend that much money? Don't feel like baking? Or maybe like me you can't bake very well, or follow a special diet (I'm lactose free). Here is my easy solution.


Ingredients
- 8oz of the cheapest biscuits (cookies) you can buy. I like to use Nice, ginger or digestive
- 4oz margarine
- 1tbsp golden syrup
- 1tbsp cocoa
- 1tbsp sugar
- 100g cheap chocolate

If you want to be a bit fancier
- 1 tbsp raisins (mix with the biscuits)
- Candy for the top

Method 1
- Crush biscuits
- Melt together margarine, syrup, cocoa and sugar
- Mix with biscuits
- Press into a greased baking pan (6in is a good size)
- Melt chocolate
- Pour over biscuit base
- Decorate with candy if using
- Leave to set

Method 2
As above but mix the the melted chocolate through the biscuit base and mix it all together, then press into a tin and leave to set (this option is similar to rocky road, and in fact you can add in some marshmallow pieces and chocolate chunks if you want)

Fancy options
You can buy fancier chocolate and biscuits and/or add spices for some interesting combinations. I once used ginger biscuits, orange infused chocolate, a pinch of cinnamon, and topped with white chocolate buttons, for example.
