I just ate two perfectly boiled eggs. Perfect -- not quite soft-boiled, but with a smooth, slightly gooey yolk, and the firm white of a duck egg. I just peeled them and dipped them in a dish of the good salt and ate them whole, and now I feel full and round and happy in a way I possibly never ever precisely have before.

That perfect yolk is what sets duck eggs far above chicken eggs in my mind.

Oh, sorry. I suppose what I mean by "whole" is "yolk AND white, not just white", which separates them from any other eggs I've eaten in the past several years.

Miss M. and I have been looking for perfectly-boiled eggs for years. For some reason the relatively simple-seeming product eludes us. How long were they boiled? Is there any special handling you give them?

I used D's method: boil a pot of water. Turn off the heat and put in two duck eggs. Let them sit for the amount of time it takes to clean the kitchen, which is 15 minutes or so. Remove, cool. Nom. Might be worth trying a duck egg just for fun!
