What should I make for dinner tonight?

Must be vegetarian, nut-free, soy-free, and be dairy-optional. Also, tasty. Whaddya think?

sauteed collard/southern greeen in olive oil and garlic with mashed carrots and potatoes--use rice milk to bind? And some more olive oil. This is a question for q_spice.

currrrrry.

i make a curry with eggplants, spinach, and onions and it's very tasty and completely vegan! you can eat it with rice and add dairy with a side of raita, or, skip the raita and be vegan-friendly!

it's not as scary as i thought it would be. my family is indian and my mom is a crazy-stellar cook that got annoyed with me every time i tried to help/learn. i started cooking just a couple of months ago (lived of a diet of very unhealthy candy bars for six years), and made up a recipe for curry myself.

granted, it's not as utterly perfect as what my mom makes, but it's really fast, fairly easy, and i think it tastes pretty good. it also doesn't require a big investment in a spice tray!

pad thai with lots of vegetables (sans peanuts of course)?

vegetable curry?

pasta with fresh diced tomatoes, olive oil, red pepper, and basil?

quinoa/cous cous/millet with fresh diced tomatoes, onions/shallots, and peas cooked in veg broth?

I also second the sauteed greens... I love them stewed with tomatoes and onion and garlic and a bit of parmesan cheese.
