Yeah, chocolate covered Katie is vegan. They're all egg and dairy free, and mostly gluten free too. I'm sure you can find something on there.
Off the top of my head the garbanzo bean blondies or whatever she calls them are awesome! Like eat the whole pan good.

My SIL makes nut brittle for egg and gluten free. She uses butter, I suspect u could sub some type of
Oleo or dairy free butter?

You could do rice krispie bars. Just make sure you use GF rice krispies and do canola oil in place of butter.
