Embarrassed by my initial question, I asked in a locked post about cooking tonight with stuff I had in the kitchen. With a lot of advice from that post (thank you unav, glitzfrau and unblinkered) I cooked something much more palatable than I had originally come up with. To sweat your onion: Put oil in pan. Put chopped onion in pan. Turn on heat as low as it will go. Cook until onion goes translucent.

Thank you! Do you put a lid on?

IIRC, I got some translucency, so I probably sweated it a bit. I didn't get any brown on the onion until after I'd added other veg.

Me too. In fact, I nearly did, but decided to wait a couple of days (or at least until the next shop) and see if I used it. And I did! Twice!

Yum! Good show! I bet it tasted even better the next day - I usually find that the flavours deepen overnight in the fridge.
