Oddly enough, we're also planning to go to Scotland before or after Dublin. (I have a Great--Uncle near Edinburgh.) If we go through Glasgow we'll have to check out that tea room.
We're going to try to get out to Taliesin West, maybe next fall. A couple of the women from our group have moved out west (California, Colorado), so we're hoping they will join us if we do.
Michael Morpurgo is one of my favourite authors, and I was a bit disappointed that I missed out on seeing War Horse in New York when we were there before the convention. I've heard it's really good, so you should definitely go!
If you go to Scotland then you should also go to Edinburgh! (Granted I didn't go to Glasgow, but I really loved Edinburgh :D)

If so, and you find yourself in Yorkshire you HAVE to visit these tea rooms http://www.bettys.co.uk/bettys_harrogate.aspx They are seriously famous in the UK, and I think you might even have to make reservations these days, but the experience was totally worth it the last time I went!
