Catfish is super common (and cheap) here on the mid-Atlantic coast. You can probably substitute any white-fleshed fish for the recipe.

One of the things I can't handle is eating cold food that are supposed to be hot (like cooked vegetables). Sayonara to cute "unheatable" bento boxes. :( hmm...sushi might work though...which reminds me, you should roll some sushi one day.

I have a sushi rolling mat -- I just haven't tried it out yet. Hmmm. Perhaps I will give it a go this weekend. :D Now I have to think of fillings!

Oh, and I am guessing your husband likes the Vietnamese summer rolls because the sauce is kind of similar to the peanut hoisin sauce.

No imitation crab in the filling, please. :)

Yes! I love those rolls too. I need to make some soon. I wonder how those would hold up in a bento? I think they might dry out if not wrapped in plastic too.

that all looks great!! your catfish sauce sounds yummmy...but i'm really not a big catfish fan. i wonder if the same sauce would taste good on a milder white fish like tilapia or something...

Lucky! A recipe for catfish! I sometimes get a chance to get catfish on sale but I never know what to do with it. Now I know! :D
