i have to giggle... my bento today has zucchini, spiral pasta, and honeydew in it as well. it's interesting how you can tell what season it is based on what foods people are eating (:

GF pasta is one of those hit-or-miss things. I found that the brands of rice pasta I tried were all difficult to reheat and either got mushy or really hard. If you can get your hands on Ancient Harvest Quinoa pasta, that stuff is absolutely the best GF pasta I've found. It tastes very similar to wheat pasta, reheats nicely, and doesn't get as mushy as all-corn pasta does when it's leftover.

You'll probably also find -- we did -- that non-wheat pastas are much more filling than traditional wheat pastas.

I'll have to try that quinoa pasta - I wonder if it is safe for a yeast free diet (hubs is now on that too). Have you tried Tinkyada brown rice pasta? It is the only rice pasta that has a super-wheaty pasta feel to it that reheats well. The spirals are better than the penne in my opinion.

No, I haven't tried Tinkyada -- it's not available where I normally get my gf pasta. Maybe I can find it at Mitsuwa. I'll look. Thanks for the recommendation!

The ingredients on the quinoa pasta are only quinoa and corn flours, plus dried veggies if you get the veggie pasta (red peppers and spinach), so unless they process it strangely, it should be safe.

If you do start trying this in Photoshop, the adjustment tool you're looking for is called "Levels". That way you can keep your darks dark while pulling up your whites.

"Brightness" pulls up EVERYthing and turns your blacks into grays, so I'd advise against it.
