Those look fantastic! I really want to get some rice paper and try my hand at spring (summer) rolls! :)

Oh you should - they are so nice and light when the weather is warm.

Hm. I like peanut sauce, but when I tried a recipe that used peanut butter to make it it came out weird and too peanut buttery. Do you have any peanut sauce recipes? I don't do fish sauce.

Hmm...I used to. I will have to dig it up (and it didn't use peanut butter).

I know this is an old entry but I've just discovered this lj and have been going back through the past entries :)

Anyway, a sauce I've used for more traditional Vietnamese rice paper rolls is a hoisin/peanut butter sauce. Just use equal amounts of both plus a few tablespoons of water to make the sauce thinner (this is subject to preference). Of course, you can vary the ratio of hoisin sauce to peanut butter, to suit your tastes. Put it in the microwave for a minute so it's easier to combine the two. And voila! :) Not sure how well this would go down with something sweet like mango though.

Gorgeous, Munkaya! We always order rice paper rolls at our favourite Vietnamese restaurant (they bring out all the ingredients and let you DIY) and I've made them a few times at home. I definitely have them on my bento to-make list for when mangoes come back into season here (November)!

We used to have DIY dinners at home. Mom would set out an electric griddle and we would cook whatever fillings we liked for our roll -- shrimp, beef, squid, etc. Yum!!
