Oh wow, those look very good..I will definately put the rolls in my "to-try" folder! You're making me hungry for a mango...looks like I will be making a trip to Safeway to pick one up! :)
Hm. I like peanut sauce, but when I tried a recipe that used peanut butter to make it it came out weird and too peanut buttery. Do you have any peanut sauce recipes? I don't do fish sauce.

Anyway, a sauce I've used for more traditional Vietnamese rice paper rolls is a hoisin/peanut butter sauce. Just use equal amounts of both plus a few tablespoons of water to make the sauce thinner (this is subject to preference). Of course, you can vary the ratio of hoisin sauce to peanut butter, to suit your tastes. Put it in the microwave for a minute so it's easier to combine the two. And voila! :) Not sure how well this would go down with something sweet like mango though.
Gorgeous, Munkaya! We always order rice paper rolls at our favourite Vietnamese restaurant (they bring out all the ingredients and let you DIY) and I've made them a few times at home. I definitely have them on my bento to-make list for when mangoes come back into season here (November)!
We used to have DIY dinners at home. Mom would set out an electric griddle and we would cook whatever fillings we liked for our roll -- shrimp, beef, squid, etc. Yum!!
